The Disneyland Candy Cane production has been a tradition for over 35 years!
The cook time is about 30 minutes to an hour, each batch of candy canes take about 2 hours to produce, and one batch only makes 40-45 candy canes. Due to the long process, only three batches are produced a day!
It takes a team of 3 Candy Masters to produce each batch of candy cane in a heat sealed kitchen at 90- 100º the jobs are:
Rolling the batch
Pulling the cane (they pull a 15 pound block of candy over a hook hung on the wall)
Shaping the candy cane
Once the cane has harden and taken its shape, they are individually wrapped, for a safe trip home.
