25 Days of Blogmas 2018: Day 21

Chocolate peppermint COokies!

What you will need:

  • 1/2 c unsalted butter, softened
  • 3/4 c sugar
  • 1 egg
  • 1/4 tsp peppermint extract
  • 1 1/4 c flour
  • 1/3 c cocoa powder
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 c chocolate chips plus 1/4  c chocolate chips for topping
  • 20-24 crushed candy canes

What to do:

  • set oven to 350º
  • cream together butter and sugar in a large bowl for 2 minutes add egg and peppermint extract and beat with mixer until light and fluffy
  • in a separate bowl combine flour, cocoa, salt, baking soda, and baking powder. Sift ingredients and mix well
  • Stir in chocolate chips and freeze for 10 minutes
  • Remove from freezer and form dough into balls and place 1/2 inches apart on a lined cookie sheet topping with chocolate chips
  • bake for 10-12 minutes until edges start to dry but  tops are slightly soft and sprinkle crushed candy cane on top
