25 Days of Blogmas 2018: Day 21

Chocolate peppermint COokies!

What you will need:

  • 1/2 c unsalted butter, softened
  • 3/4 c sugar
  • 1 egg
  • 1/4 tsp peppermint extract
  • 1 1/4 c flour
  • 1/3 c cocoa powder
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 c chocolate chips plus 1/4  c chocolate chips for topping
  • 20-24 crushed candy canes

What to do:

  • set oven to 350º
  • cream together butter and sugar in a large bowl for 2 minutes add egg and peppermint extract and beat with mixer until light and fluffy
  • in a separate bowl combine flour, cocoa, salt, baking soda, and baking powder. Sift ingredients and mix well
  • Stir in chocolate chips and freeze for 10 minutes
  • Remove from freezer and form dough into balls and place 1/2 inches apart on a lined cookie sheet topping with chocolate chips
  • bake for 10-12 minutes until edges start to dry but  tops are slightly soft and sprinkle crushed candy cane on top

Christmas Puppy Dinner!

Of course, my pups get to join in on all the festive foods so here is what I will be making them this Christmas! Lean ground turkey meatballs, with a cranberry sauce garnish and a sweet potato mash! 

Roll the ground turkey into meatball shaped and boil them in dog safe beef stock and cook until no pink. For the cranberry garnish, you grab fresh cranberries and some water and cook in a saucepan until liquified. You can strain the chunks but I like to leave them in. For the sweet potato mash, you boil some sweet potato mash them up and I like to add a tiny bit of pineapple to give it some yummy flavor!

Milk Chocolate Candy Cane Pot de Creme!

So this year for Christmas I decided to try a new dessert from my new Dinsey Cookbook! I can tell you right now I think it’s going to be a hit!

What you’ll need:

  • 1 Tsp powdered unflavored gelatin
  • 1 Tbs cold water
  • 2 c heavy whipping cream
  • 5 egg yolks
  • 1/2 c sugar
  • 3/4 c chopped milk chocolate
  • 1 Tsp peppermint extract

What to do:

  • Stir gelatin and water in a small bowl: let sit while cream heats
  • Heat heavy cream in a medium saucepan over medium heat until steaming. Don’t bring to a boil
  • Once cream begins to steam add gelatin and stir until it dissolves
  • in a separate bowl beat egg yolks and sugar until the color is pale
  • while whisking continuously drizzle 1/2 c of hot cream into egg yolk mixture
  • whisk remaining egg yolk mixture into hot cream. turn heat to low
  • continue to cook and stir until mixture thickens enough to coat the back of the spoon
  • add chocolate to a large bowl and pur the hot cream over chocolate
  • stir in the peppermint extract
  • strain mixture through a fine-mesh sieve to remove any lumps
  • pour into a 4 oz serving cup and refrigerate for at least 4 hours

To top it off at some whipped cream, peppermint bark and some crushed candy cane for more of a peppermint flavor!

Winter weight and a new routine!

The past couple of months have been super stressful for the pups and I. My grandma had a major fall breaking her shoulder and has gone through two major surgeries at 80 years old. So for the past three months, our routine has been a bit out of whack. Today, the pups had a checkup and basically, they have gained some weight along with me…so, in order for all of us to get this winter weight off and get back into shape, I have rearranged our current whacky schedule:

Morning Routine:

  • 5:20am-walk#1
  • 5:30am-brush teeth, trim nails, and clean ears
  • 5:40am-breakfast
  • 5:50-walk#2
  • 6am get ready for work

After school/work:

  • 4:45pm-5:45- visit Nana
  • 5:55pm-walk#4
  • 6:05pm-dinner
  • 6:30pm-walk#5
  • 6:40pm-homework/cuddles
  • 8:30pm-run
  • 8:40pm-mini workout/Doga
  • 9pm-teeth, face and bed

Obviously, this is the goal but I’m sure things will be changing consistently due to different circumstances throughout the day but this is what we will try an aim for. Also, the pups do get treats throughout the day, I am fortunate that my dad is maintenance for my apartment building so they are never really alone. I did skip #3 walk because my mom stops by my house and I know for a fact that she will be walking them when she gets there. As you can guess my littles are very loved and never really alone.

Mini DIY Wreaths!

What you need:

  • Cardboard
  • A big and small circle
  • Hot glue gun
  •  Pipe cleaners
  • Sequence
  • Small ribbon

What to do:

  • Cut our a donut in your cardboard, I used an old Twinings tea box.
  • With your pipe cleaners wrap it around the cardboard until it is fully covered.
  • Hot glue some sequence, add a bow and you’re done! 

Honestly, there are so many possibilities when it comes to decorating your mini wreaths!

Holiday Windows! 

One of my all time FAVORITE traditions is going to Union Square with the pups to look at all the cute little animals in the Macy’s windows. Not only can you just look at them, but you can meet them and adopt them into their forever homes. Now, if you are like me and are not looking to adopt you can also donate to the SPCA! Which is what the puppies and I do every year, we donate $10 to every window because those cute little squishy faces are worth it! If I had more money I would love to donate more BUT unfortunately my two littles and college takes up majority of my money.

Inaugural Running Universal 5k Event!

So in the last post I talked about signing my mom and up for the inaugural running Universal event and I have gotten some questions about it. There are a couple different options to chose from: Fan, standard package, VIP package, and play all day.

Fan Package $45:

  • The fan package is for spectators supporting their runners or would like to see all the crazy people running at 6am. If you do sign up for the fan package you will receive: Minion cap, drawstring backpack, guaranteed access to the fan zone at the finish line, complimentary beverages and refreshments at the finish line, along with complimentary general parking.

Standard Package $75:

  • The standard package allows you take part in the 5k. You will receive the Minion Finisher Medal, Minion 5k Bib, Running Universal T-shirt, collectable minion pin, post race beverages and refreshments, custom digital finisher certificate, complimentary general parking, and the opportunity to purchase post race entry to the park at an exclusive price($92 I think).

VIP Package $135:

  • The VIP package includes the standard registration package, exclusive VIP check in, complimentary valet parking, post race VIP breakfast on  Universal City Walk, running universal reusable water bottle, and a one on one meet and greet with minions.

Play All Day Package $169:

  • The play all day package will include either a Standard or VIP race registration, one day general admission theme park ticket at an exclusive running universal price including early park admission.

VIP Play All Day Package $229:

  • Theres not a whole lot of info for this package but I am assuming that it will include everything in the Play All Day Package along with a VIP park admissions ticket, but don’t quote me on that.

Packet pick up will be open May 9 and 10 times will be available closer to the race, while race day is May 11, 2019. The corrals will open at 5am and the actual race start time is 6am, VIP breakfast will begin at 7:30am and race gear will be available after the race which to be honest is my second favorite part the medal being my favorite. I cant wait till race day!

Last Minute Gift Purchases!

I spent way too much money but I think its an exception when it comes to gift giving especially if it’s the one you love. Both presents I purchased are for my mom and I and our crazy adventures we have together. One of the ones is a secret and she has to wait to find out while the other I had to tell her so she could prepare.

The first present, are tickets for the Official Walt Disney Studios Tour D23 Gold Member Exclusive event for Sat. Jan 26, 2019. This will be our second D23 event and the second time we will get to go to the Walt Disney Studios.

The second present is the Inaugural Running Universal 5k event. This is the first non runDisney event my mom and I will participate in, so it will be a bit of a changeup for us. One thing I am excited for is the mischievous Minions will be the theme of the event and who doesn’t love minions?

25 Days of Christmas 2018: Day 13

Zebra Peppermint Hot Chocolate!

This is one of my favorite drinks to make around the Holiday season because its Hot Chocolate and Peppermint!

Ingredients:

  • Ghirardelli White Hot Chocolate Mix
  • Nestle Hot Chocolate Mix
  • Ghirardelli Peppermint Hot Chocolate Mix
  • 1 c water
  • Disney cup

So I do 3 scoops white hot cocoa, 1 scoop nestle hot cocoa, 1 1/2 scoop peppermint hot cocoa mix. Now, I like my hot chocolate sweet and not super pepperminty so you can change it up and add more peppermint if you want or less.
