Goodbye 2018 Hello 2019!

I will have to say this year was a bit rough. There were deaths in the family, and some eye opening experiences to certain people in my life. My grandma had two surgeries which led to some very stressful nights.

Aside from all the negative, I’ve learned people’s true colors and know who I can trust and who I can’t. My grandma turned 80 years old and has had two surgeries and is on her way to being independent again. I am also learning how to not stress out about the little things in life and to try and find that silver lining. I had two very healthy little puppers, who bring so much joy to my life.

This year, I started off running 48.6 miles, and ended it with finishing the Jeff Galloway’s 2018 mile challenge with 3000+ miles. As for 2019 I will do my best with not stressing and of course I will be starting off the year with a 5k run no more 48.6 miles for me…hopefully. I’m also praying this year for everyone’s health, happiness and sanity. I’m glad I’m starting off the year with the ones that mean the most to me especially those furry little ones of mine.

Walt Disney World Holiday Activities! 

  1. A Walt Down Main Street USA

Walking into the Magic Kingdom, I instantly feel the Holiday spirit. The first thing you notice is the GIANT Christmas tree and then its all the crazy magical decorations that leads to the beautiful Cinderella’s Castle.

2. Mickey’s Very Merry Christmas Party

This is a party I do’t suggest you miss! This is one of the all time favorite parties to attend. All the festivities and cookies my heart could desire! 

3. Candlelight Processional

Although it is long ceremony, it is so beautiful and something you should check out at least once. 

4. Holiday Merch!

What better way to get into the holiday spirit than getting some fun merchandise for you, your house or friends and family! 

5. Holiday Food!

I mean what else do we live for? I love trying all the fun holiday foods its one of my favorite holiday traditions when I get to the park.

25 Days of Blogmas 2018: Day 21

Chocolate peppermint COokies!

What you will need:

  • 1/2 c unsalted butter, softened
  • 3/4 c sugar
  • 1 egg
  • 1/4 tsp peppermint extract
  • 1 1/4 c flour
  • 1/3 c cocoa powder
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 c chocolate chips plus 1/4  c chocolate chips for topping
  • 20-24 crushed candy canes

What to do:

  • set oven to 350º
  • cream together butter and sugar in a large bowl for 2 minutes add egg and peppermint extract and beat with mixer until light and fluffy
  • in a separate bowl combine flour, cocoa, salt, baking soda, and baking powder. Sift ingredients and mix well
  • Stir in chocolate chips and freeze for 10 minutes
  • Remove from freezer and form dough into balls and place 1/2 inches apart on a lined cookie sheet topping with chocolate chips
  • bake for 10-12 minutes until edges start to dry but  tops are slightly soft and sprinkle crushed candy cane on top

Christmas Puppy Dinner!

Of course, my pups get to join in on all the festive foods so here is what I will be making them this Christmas! Lean ground turkey meatballs, with a cranberry sauce garnish and a sweet potato mash! 

Roll the ground turkey into meatball shaped and boil them in dog safe beef stock and cook until no pink. For the cranberry garnish, you grab fresh cranberries and some water and cook in a saucepan until liquified. You can strain the chunks but I like to leave them in. For the sweet potato mash, you boil some sweet potato mash them up and I like to add a tiny bit of pineapple to give it some yummy flavor!

Milk Chocolate Candy Cane Pot de Creme!

So this year for Christmas I decided to try a new dessert from my new Dinsey Cookbook! I can tell you right now I think it’s going to be a hit!

What you’ll need:

  • 1 Tsp powdered unflavored gelatin
  • 1 Tbs cold water
  • 2 c heavy whipping cream
  • 5 egg yolks
  • 1/2 c sugar
  • 3/4 c chopped milk chocolate
  • 1 Tsp peppermint extract

What to do:

  • Stir gelatin and water in a small bowl: let sit while cream heats
  • Heat heavy cream in a medium saucepan over medium heat until steaming. Don’t bring to a boil
  • Once cream begins to steam add gelatin and stir until it dissolves
  • in a separate bowl beat egg yolks and sugar until the color is pale
  • while whisking continuously drizzle 1/2 c of hot cream into egg yolk mixture
  • whisk remaining egg yolk mixture into hot cream. turn heat to low
  • continue to cook and stir until mixture thickens enough to coat the back of the spoon
  • add chocolate to a large bowl and pur the hot cream over chocolate
  • stir in the peppermint extract
  • strain mixture through a fine-mesh sieve to remove any lumps
  • pour into a 4 oz serving cup and refrigerate for at least 4 hours

To top it off at some whipped cream, peppermint bark and some crushed candy cane for more of a peppermint flavor!

25 Days of Blogmas 2018: Day 18!

Winter weight and a new routine!

The past couple of months have been super stressful for the pups and I. My grandma had a major fall breaking her shoulder and has gone through two major surgeries at 80 years old. So for the past three months, our routine has been a bit out of whack. Today, the pups had a checkup and basically, they have gained some weight along with me…so, in order for all of us to get this winter weight off and get back into shape, I have rearranged our current whacky schedule:

Morning Routine:

  • 5:20am-walk#1
  • 5:30am-brush teeth, trim nails, and clean ears
  • 5:40am-breakfast
  • 5:50-walk#2
  • 6am get ready for work

After school/work:

  • 4:45pm-5:45- visit Nana
  • 5:55pm-walk#4
  • 6:05pm-dinner
  • 6:30pm-walk#5
  • 6:40pm-homework/cuddles
  • 8:30pm-run
  • 8:40pm-mini workout/Doga
  • 9pm-teeth, face and bed

Obviously, this is the goal but I’m sure things will be changing consistently due to different circumstances throughout the day but this is what we will try an aim for. Also, the pups do get treats throughout the day, I am fortunate that my dad is maintenance for my apartment building so they are never really alone. I did skip #3 walk because my mom stops by my house and I know for a fact that she will be walking them when she gets there. As you can guess my littles are very loved and never really alone.
