Honey Tea Cake Loaf
I absolutely love this Honey Tea Cake Loaf. It brings me such comfort and warmth in my tummy every time I bake it.
Ingredients:
- 1 1/2 C all purpose flour
- 1 Tsp baking powder
- 1 Tsp salt
- 3/4 C Sugar
- 4 Large egg yolks (room temp)
- 1 Large egg (room temp)
- 1/2 C heavy cream (room temp)
- 1 Teaspoon vanilla extract
- 1 stick and 3 tablespoon butter (room temp)
- 1/4 C honey (warmed up and diluted with 2 tablespoon hot water)
Instructions:
- Preheat oven to 350º
- Butter and lightly flour a 8.5×4.5 inch baking pan and set aside.
- In a medium bowl, whisk the egg yolks, egg, heavy cream, and vanilla.
- In a stand mixer bowl, sift the flour, baking powder, salt. Add in the sugar and mix until well combined.
- Add in the softened butter and half of the egg mixture and beat on medium low until combined.
- increase the speed to medium high and beat for another 3 minutes in order to get a thick and airy cake batter. Lower the speed again and add the remainder of the egg mixture and gently mix for another 2 minutes.
- Pour the batter into the prepared baking sheet and bake for 35-45 minutes.
- The will be ready when you stick a knife in the center and it comes out clean.
- Before pulling out your tea cake loaf, prepare the honey syrup by mixing the honey the the water in a small measuring cup or bowl, and mix until you get a smooth syrup.
- Either brush or pour the mixture over the top of the loaf while it is still hot.
- Run a spatula around the edge of the loaf and set it aside to cool down.
Personally, I never have the patience to wait until it cools down so I immediately cut a piece and eat it. I enjoy burning my mouth when it comes to food because I think that it taste a lot better that way. I also enjoy eating this with a GIANT cup of tea while I read.
