Cozyathon 2023: Day 13

Honey Tea Cake Loaf

I absolutely love this Honey Tea Cake Loaf. It brings me such comfort and warmth in my tummy every time I bake it.

Ingredients:

  • 1 1/2 C all purpose flour
  • 1 Tsp baking powder
  • 1 Tsp salt
  • 3/4 C Sugar
  • 4 Large egg yolks (room temp)
  • 1 Large egg (room temp)
  • 1/2 C heavy cream (room temp)
  • 1 Teaspoon vanilla extract
  • 1 stick and 3 tablespoon butter (room temp)
  • 1/4 C honey (warmed up and diluted with 2 tablespoon hot water)

Instructions:

  • Preheat oven to 350º
  • Butter and lightly flour a 8.5×4.5 inch baking pan and set aside.
  • In a medium bowl, whisk the egg yolks, egg, heavy cream, and vanilla.
  • In a stand mixer bowl, sift the flour, baking powder, salt. Add in the sugar and mix until well combined.
  • Add in the softened butter and half of the egg mixture and beat on medium low until combined.
  • increase the speed to medium high and beat for another 3 minutes in order to get a thick and airy cake batter. Lower the speed again and add the remainder of the egg mixture and gently mix for another 2 minutes.
  • Pour the batter into the prepared baking sheet and bake for 35-45 minutes.
  • The will be ready when you stick a knife in the center and it comes out clean.
  • Before pulling out your tea cake loaf, prepare the honey syrup by mixing the honey the the water in a small measuring cup or bowl, and mix until you get a smooth syrup.
  • Either brush or pour the mixture over the top of the loaf while it is still hot.
  • Run a spatula around the edge of the loaf and set it aside to cool down.

Personally, I never have the patience to wait until it cools down so I immediately cut a piece and eat it. I enjoy burning my mouth when it comes to food because I think that it taste a lot better that way. I also enjoy eating this with a GIANT cup of tea while I read.
