Coffee Cake Cookies

I absolutely LOVE coffee cake but I will have to say coffee cake cookies are just as delicious in my opinion.

Ingredients:

Streusel-

  • 1/2 C all purpose flour
  • 1/3 C brown sugar
  • 2 Tsp. Cinnamon
  • A Pinch of salt
  • 5 Tbsp soften butter

Cookie Dough-

  • 1 1/4 C all purpose flour
  • 3/4 C cake flour
  • 1 tsp corn starch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk

Frosting (optional) –

  • 2 Tbsp. melted butter
  • 3 Tbsp. heavy cream
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla

Directions:

Streusel –

  1. In a medium sized bowl combine the flour, brown sugar, cinnamon and salt together. Then work in the butter until small clumps form. 
  2. Refrigerate.

Cookie Dough-

  1. Preheat the oven to 400°F. 
  2. Line two baking sheets with parchment paper or silicone baking mats. Set aside.
  3. Combine all purpose flour, cake flour, corn starch, cinnamon, baking soda, baking powder and salt. Set aside.
  4. In a mixer place the cubed butter and sugars into the bowl of a stand mixer and secure the paddle attachment.
  5. Mix for 1 – 2 minutes or until smooth.
  6. Add in the egg, egg yolk and vanilla extract and blend until mixed.
  7. Swipe the side of the bowls and mix again.
  8. Gradually add in the dry ingredients and continue mixing until well combined.
  9. Roll out your cookie dough and place on the parchment paper.
  10. Use your thumb to make a dip into the cookies and add a bit of your filling to the center.
  11. Bake for about 8-11 minutes or until the edges look slightly golden.
  12. Place on a cooling wrack.

Icing-

  • Whisk together all the ingredients for the icing and drizzle over the cookies.

You can wait until they cool BUT if you are like me I enjoy burning my mouth and eating them as soon as they are done. I also really enjoy cookies when they are slightly undercooked. I hope you enjoy this recipe as much as I do!
