Coffee Cake Cookies
I absolutely LOVE coffee cake but I will have to say coffee cake cookies are just as delicious in my opinion.
Ingredients:
Streusel-
- 1/2 C all purpose flour
- 1/3 C brown sugar
- 2 Tsp. Cinnamon
- A Pinch of salt
- 5 Tbsp soften butter
Cookie Dough-
- 1 1/4 C all purpose flour
- 3/4 C cake flour
- 1 tsp corn starch
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 8 Tbsp. cold butter, unsalted, cut into cubes
- 1/2 cup brown sugar, packed
- 1/4 cup sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1 large egg yolk
Frosting (optional) –
- 2 Tbsp. melted butter
- 3 Tbsp. heavy cream
- 1 cup powdered sugar, sifted
- 1 tsp. vanilla
Directions:
Streusel –
- In a medium sized bowl combine the flour, brown sugar, cinnamon and salt together. Then work in the butter until small clumps form.
- Refrigerate.
Cookie Dough-
- Preheat the oven to 400°F.
- Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- Combine all purpose flour, cake flour, corn starch, cinnamon, baking soda, baking powder and salt. Set aside.
- In a mixer place the cubed butter and sugars into the bowl of a stand mixer and secure the paddle attachment.
- Mix for 1 – 2 minutes or until smooth.
- Add in the egg, egg yolk and vanilla extract and blend until mixed.
- Swipe the side of the bowls and mix again.
- Gradually add in the dry ingredients and continue mixing until well combined.
- Roll out your cookie dough and place on the parchment paper.
- Use your thumb to make a dip into the cookies and add a bit of your filling to the center.
- Bake for about 8-11 minutes or until the edges look slightly golden.
- Place on a cooling wrack.
Icing-
- Whisk together all the ingredients for the icing and drizzle over the cookies.
You can wait until they cool BUT if you are like me I enjoy burning my mouth and eating them as soon as they are done. I also really enjoy cookies when they are slightly undercooked. I hope you enjoy this recipe as much as I do!
