No Bake Peppermint Cheesecake
I LOVE cheesecake and I love peppermint so I had to make this delicious creation. I do switch it up because, I personally am not a fan of Oreos BUT my family LOVES them so I made a few without the Oreo and regular graham crackers.
What you will need:
Crust-
- 20 Oreos (graham crackers)
- 5 Tbsp of butter
Filling-
- 1 C heavy whipping cream (cold)
- 2 Packges of cream cheese (softened)
- 1 1/2 C white chocolate chips
- 1/2 Teaspoon peppermint extract (optional)
- 1/2 C Chopped Andes peppermint crunch (plus additional for topping)
- Whipped cream
What to do:
- Line two 12-cup muffin tins with cupcake liners and set aside
- Crush up your Oreos until there are no chunks. (I use a food processor or a blender to get it finely chopped)
- Fill each cupcake liner with 1 1/2 tablespoons of Oreo crumbs. Press firmly with the back of a spoon to pack in
- In a large mixing bowl, beat the whipping cream to stiff peaks. Set aside
- In a separate mixing bowl, beat the cream cheese until smooth.Set aside
- Melt white chocolate chips until smooth and immediately mix into the cream cheese mixture
- Fold in chopped peppermint and whipped cream. If you are using peppermint extract add it in too.
- Fill the cupcake liners with the cheesecake filling, using about ¼ cup of the cheesecake batter for each one
- Refrigerate at least 4 hours, or overnight.
I like to top it with whipped cream and add a peppermints before serving. I usually can only wait the 4 hours before eating one, but they are also worth the wait too. I hope you enjoy them.
