As you all know, I love food, but I love themed food, which is how Fall Foods came into existence. As we get closer to October, the foods may become a bit spookier. But for now, here are delicious Pumpkin S’mores Cookies!
Pumpkin S’mores Cookies
- 1 C butter (softened)
- 3/4 C Brown Sugar (packed)
- 1/4 C Granulated Sugar
- 1/2 C Pumpkin Puree
- 1 Egg
- 1 Tsp Vanilla Extract
- 2 1/4 C Flour
- 1 Tsp Baking Powder
- 1 Tsp Pumpkin Pie Spice
- 1/2 Tsp Salt
- 1 C Chocolate Chips
- 1/2 C White Chocolate Chips (I like to add some white chocolate chips as well)
- 1 C Mini Marshmallows
- 1/2 C Mini Marshmallows ( I LOVE marshmallows so I usually add more)
- 8 Graham Crackers (Broken into small pieces)
- 1 Tsp Food Coloring (Orange, Optional)
- Marshmallows (Garnish)
- Graham Crackers (Garnish)
Instructions:
- Preheat Oven to 350º. Line a baking sheet wit parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until lightly fluffy.
- Beat in the pumpkin puree, egg, and vanilla extract until well combined. (If you are adding the orange food coloring, add that in too)
- In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, and mix well until combined.
- Gently fold in the chocolate chips, mini marshmallows and graham cracker pieces.
- Use a spoon to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Top each cookie with a marshmallows, chocolate chips and pieces of graham crackers)
- Bake in the preheated oven for 12 to 14 minutes, or until the edges are golden and the center is still soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
These are so delicious and taste like fall. Plus, they make the entire house smell delicious. I also added a couple of ghost sprinkles since the inside of my house is filled with ghosts, and I only found it fitting!
