Coffee Cake!
I don’t know about you, but I am absolutely OBSESSED with coffee cake, especially this time of year!
Ingredients:
- 2 cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ½ cup butter room temperature
- 1 cup milk
- 1 large egg
- 2 teaspoons vanilla extract
Topping:
- ½ cup brown sugar
- ½ cup white sugar
- ½ cup all-purpose flour
- 2 teaspoons ground cinnamon
- ¼ cup cold butter diced
Directions:
- Preheat oven to 350° F and grease an 8×8 square baking dish with butter
Topping:
- Add the flour, brown sugar, white sugar, and cinnamon to a small mixing bowl and mix together
- Add the diced cold butter to the flour mixture and cut it into the flour mixture and mix together until mixture is crumbly and moist. I like to use my hands because it is easier for me.
Cake:
- In a medium mixing bowl, combine the flour, sugar, baking powder, cinnamon and salt and mix well
- Add butter to the mixing bowl and mix until well combined
- Add the milk, egg, and vanilla extract and stir until just barely blended
- Pour half of the cake batter into the baking dish
- Sprinkle a thin layer of the crumb topping across the batter
- Then pour the remaining batter in and spread evenly
- Top with the remaining streusel topping spreading evenly across the top
- Bake for 40 minutes or until a toothpick comes out clean when inserted into the center
You can wait the 10 minutes to let it cool, or just dive right in like I do. I always like to add extra crumble topping because it is one of my favorite parts of the coffee cake. If I need a bit more sugar in my life, (which I don’t) I will add some powder sugar to top it off. I hope you enjoy this recipe!
