Cozyathon 2024: Day 22

Coffee Cake!

I don’t know about you, but I am absolutely OBSESSED with coffee cake, especially this time of year!

Ingredients:

  • 2 cups all-purpose flour
  • ½ cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup butter room temperature
  • 1 cup milk
  • 1 large egg
  • 2 teaspoons vanilla extract

Topping:

  • ½ cup brown sugar
  • ½ cup white sugar
  • ½ cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • ¼ cup cold butter diced

Directions:

  1. Preheat oven to 350° F and grease an 8×8 square baking dish with butter

Topping:

  1. Add the flour, brown sugar, white sugar, and cinnamon to a small mixing bowl and mix together
  2. Add the diced cold butter to the flour mixture and cut it into the flour mixture and mix together until mixture is crumbly and moist. I like to use my hands because it is easier for me.

Cake:

  1. In a medium mixing bowl, combine the flour, sugar, baking powder, cinnamon and salt and mix well
  2. Add butter to the mixing bowl and mix until well combined
  3. Add the milk, egg, and vanilla extract and stir until just barely blended
  4. Pour half of the cake batter into the baking dish
  5. Sprinkle a thin layer of the crumb topping across the batter
  6. Then pour the remaining batter in and spread evenly
  7. Top with the remaining streusel topping spreading evenly across the top
  8. Bake for 40 minutes or until a toothpick comes out clean when inserted into the center

You can wait the 10 minutes to let it cool, or just dive right in like I do. I always like to add extra crumble topping because it is one of my favorite parts of the coffee cake. If I need a bit more sugar in my life, (which I don’t) I will add some powder sugar to top it off. I hope you enjoy this recipe!
