White Chocolate Chip Candy Cane Cookie!

It is the first recipe this month and I am so excited because I absolutely LOVE white chocolate chips cookies. Let’s get started!

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup shortening
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 1 1/2 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup crushed candy canes
  • 1 cup white chocolate chips, plus more for dotting on the tops

Directions:

  1. Preheat oven to 350º and line a cookie sheet with parchment paper.
  2. In a large bowl beat together butter, shortening, white sugar, brown sugar for about 2 minutes or until it is fluffy.
  3. Add in vanilla and peppermint extract and mix in one egg at a time.
  4. Turn the mixer to low speed and mix in the flour, baking soda and salt. Take some of the dough in between your fingers and if it sticks add a little more flour.
  5. Mix in crushed candy cane and white chocolate chips. (I like to add extra chocolate chips)
  6. Form your dough balls and place them on your lined cookie sheet.
  7. Bake them for 8-10 minutes, or until the tops look set.
  8. ENJOY! Or let cool before enjoying but I enjoy them when they are burning my mouth.

I like to make a nice big cup of hot chocolate and dipping these cookies in, but they are also so nice to eat by themselves. Of course we did make extra just to hand out to the family, neighbors and friends. I hope you enjoy them as much as I did because these are some of my favorite cookies. You can also leave out the peppermint extract. I do this when I don’t have peppermint extract on hand and I want these cookies.
