Namjooning Readathon 2025: Day 18

Bibim Guksu

Let’s make some Bibim Guksu! It is a cold noodle salad dish. Very refreshing on hot days when you are craving noodles.

Ingredients:

Noodles:

  • Buckwheat or Soba noodles

Salad Toppings: (short thin strips)

  • Lettuce leaves (butter or oakleaf)
  • 1/4 C Red cabbage
  • 1/2 small cucumber
  • 1/3 small carrot
  • 1 red radish
  • Snow Pea (optional)
  • 2 Tbsp Kimchi (cut into small pieces)

Sauce: (mix in a bowl)

  • 2 Tbsp gochujang
  • 2 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • 1 Tbsp honey
  • 1 Tbsp brown sugar
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Directions:

  1. Boil the noodles in rolling boiling water following the package instructions. (I boiled mine for 3 mins.) Drain the noodles and run some cold water over the noodles to cool them down. Drain.
  2. Place the noodles in a large serving bowl and add the salad ingredients and sauce. Serve.
  3. To eat, mix all ingredients well and enjoy!

Honestly, this is so good and delicious. You can always add more of what you like and take out what you want. It’s your food. I hope you all enjoy this dish as much as I did.
