Namjooning Readathon 2025: Day 25

Noodle Dish!

Panit Bihon is one of my favorite dishes. I ate this throughout my entire childhood and I will hopefully share this recipe with you in a way that you can follow because I am terrible at writing down and explaining family recipes.

Ingredients:

  • Rice Noodles
  • Half of an onion (thinly cut)
  • Garlic cloves (minced, as many or little as you want)
  • Carrots (peel and thinly cut)
  • Cabbage (thinly cut)
  • Bok Choy (optional, but my favorite)
  • Ground Pork (optional)
  • Lemon (optional)

Sauce –

  • 2 C chicken broth
  • 2 tbs dark soy sauce
  • 2 tbs regular soy sauce
  • 1 Tbs oyster sauce
  • 1 Tsp sugar (to taste)
  • Pepper (to taste)

Directions:

  • Heat up your frying pan and add a bit of oil.
  • In a bowl add in your sauce ingredients, mix until well combined and set aside.
  • Add in your onion and garlic. Continuously mix.
  • Once you smell the onion and garlic add in your carrots, cabbage, and bok choy.
  • Once the veggies start softening add in your ground pork.
  • Once your veggies are soft and translucent and your meat is fully cooked add in your sauce and mix together.
  • Add in all your noodles and submerge them into the sauce and mix
  • Once the noddles have softened up let them sit for a while until the liquid has reduce.
  • Once the liquid has reduced start to stir for a couple more minutes.
  • ENJOY!

This is my childhood. My dad used to make this all the time for me and as I got older I took over. You can add whatever veggies and or meat you would like. I grew up eating it with ground pork, but chicken is also one of my favorites and can be easier because you can buy a chicken already cooked and add that in. I also squeeze some lemon on top of the noodles, but you don’t have to.
