Pumpkin S’mores Cookies

Its time for one of my favorite snacks, S’mores but we are making it fall and making in a cookie form. Let’s get started.

Ingredients:

  • 1 C butter (room temp)
  • 1 C brown sugar (packed)
  • 1/2 C granulated sugar
  • 1 C pumpkin puree
  • 1 Egg
  • 1 Tsp vanilla extract
  • 2 1/4 C flour
  • 1 Tsp baking soda
  • 1 Tsp pumpkin pie spice
  • 1 Tsp salt
  • 1 C chocolate chips (or more…)
  • 1 C mini marshmallows (or more…)
  • 8 graham crackers (broken into small pieces)
  • 1 Tsp orange food coloring (optional)

Additional Toppings:

  • Chocolate Chips
  • Mini Marshmallows
  • Crushed Graham Crackers

Directions:

  1. Preheat oven to 350ºF. Line baking sheet with parchment paper and set aside
  2. In a large bowl cream together the butter, brown sugar and granulated sugar until light and fluffy.
  3. Beat the pumpkin puree, egg and vanilla extract until well combined. (add in your orange food coloring if you plan to use it)
  4. In a seperate bowl, whisk together flour, baking soda, pumpkin spice and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mix until well combined. Make sure you don’t over mix.
  6. Gently fold in the chocolate chips, mini marshmallows and crushed graham cracker pieces.
  7. Scoop your dough onto prepared baking sheets making sure they are at least 2 inches apart.
  8. Add some extra chocolate chips, marshmallows and graham crackers to the top of each dough ball.
  9. Bake for 12-14 minutes or until edges are golden brown and center is still soft.

Not only do these smell delicious, but they are so gooey and delicious and personally I love the marshmallows that are in there, I think they give the cookies a perfect touch.
