Pumpkin Cinnamon Rolls
I LOVE cinnamon rolls, aside from popcorn this was what I lived off as a child, but with extra frosting!
Ingredients:
- 1 C Milk
- 1/2 C Canned Pumpkin
- 1/4 C melted Butter
- 1/2 C Sugar
- 2 3/4 C Flour
- 1 Packet Active Dry Yeast
- 1 Tsp Salt
- 1/4 Tsp Nutmeg
Frosting:
- 8 oz block of cream cheese (softened)
- 1 Stick salted butter (softened)
- 3 3/4 – 4 C powder sugar
- 3/4 Tsp vanilla extract
Instructions:
- Preheat oven to 350º and grease the pan you are going to use
- Mix wet and dry ingredients separately
- Combine the mixtures and knead into a dough
- Let it rise for about an hour
- Roll out the dough, spread cinnamon sugar filling, and roll up
- Cut into rolls, place in pan, let it rise again for another 30 minutes.
- Let it bake for 20-25 minutes
Frosting:
- Using a stand mixture and on medium to high speed cream your butter until smooth. Add in your cream cheese and mix together until smooth. About 3-5 minutes
- Add your vanilla extract
- Slowly add in your sifted powder sugar in cups.
- Mix until powder sugar is incorporated and the frosting is smooth.
I personally LOVE frosting, so I make a bit more. To make it more festive you can add some cute halloween sprinkles, or add some pumpkin spice to the frosting, but I personally enjoy it as it. I hope you enjoy them.
