Pumpkin Cinnamon Rolls

I LOVE cinnamon rolls, aside from popcorn this was what I lived off as a child, but with extra frosting!

Ingredients:

  • 1 C Milk
  • 1/2 C Canned Pumpkin
  • 1/4 C melted Butter
  • 1/2 C Sugar
  • 2 3/4 C Flour
  • 1 Packet Active Dry Yeast
  • 1 Tsp Salt
  • 1/4 Tsp Nutmeg

Frosting:

  • 8 oz block of cream cheese (softened)
  • 1 Stick salted butter (softened)
  • 3 3/4 – 4 C powder sugar
  • 3/4 Tsp vanilla extract

Instructions:

  1. Preheat oven to 350º and grease the pan you are going to use
  2. Mix wet and dry ingredients separately
  3. Combine the mixtures and knead into a dough
  4. Let it rise for about an hour
  5. Roll out the dough, spread cinnamon sugar filling, and roll up
  6. Cut into rolls, place in pan, let it rise again for another 30 minutes.
  7. Let it bake for 20-25 minutes

Frosting:

  1. Using a stand mixture and on medium to high speed cream your butter until smooth. Add in your cream cheese and mix together until smooth. About 3-5 minutes
  2. Add your vanilla extract
  3. Slowly add in your sifted powder sugar in cups.
  4. Mix until powder sugar is incorporated and the frosting is smooth.

I personally LOVE frosting, so I make a bit more. To make it more festive you can add some cute halloween sprinkles, or add some pumpkin spice to the frosting, but I personally enjoy it as it. I hope you enjoy them.
