Honey Cake!
I absolutely LOVE honey cake. I find it very warm and cozy which is why today’s recipe is going to be the recipe to make our own. I got this recipe from Freshly Made Recipes and let me tell you it is DELICIOUS! So let’s get started.
Ingredients:
Dry
- 2 1/2 C Flour
- 2 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1 TSp Cinnamon (optional)
Wet
- 1 C Honey (wildflower or clover recommended)
- 3/4 C Vegetable Oil (or melted butter)
- 3 Large Eggs
- 1 C Fresh Orange Juice
- 1 Tsp Vanilla Extract
Add Ins (Optional)
- 1/2 C Chopped Walnuts or Almonds
- 1/4 C Raisins
- 1 Tbs Grated Orange Zest
Instructions:
- Prepare the Batter
- Preheat oven to 350º. Grease a 9×13-inch pan or two 9-inch round cake pans and line them with parchment paper. Set aside.
- In a large mixing bowl, whisk together the honey, oil, eggs, and vanilla extract until smooth.
- Stir in the orange juice and mix well.
- Combine Dry and Wet Ingredients
- In a separate bowl, sift together flour, baking powder, baking soda, salt, and cinnamon.
- Slowly fold the dry ingredients into the wet ingredients, stirring gently until just combined.
- If using the nuts or raisins, fold them in last.
- Bake the cake
- Pour the batter into the prepared pans
- Bake for 40-45 minutes, or until the top is golden brown and a skewer inserted in the middle comes out clean
- Allow the cake to rest in the pan for about 10 minutes, then carefully remove it and let it cool completely on a wire rack.
Honestly, this recipe is so delicious that you have to give some of the cake away because you will want to eat it all. Which 100% I ate it all in one sitting. Of course, it is the time of giving, so I baked some cakes for my neighbors, family, and friends, and I also made some with nuts and raisins for some of them, and they absolutely LOVED them.
