Gooey Christmas Butter Cookies

My friend has put in a request. Gooey Christmas Butter Cookies. So let’s get to baking!

Ingredients:

  • ½ cup Butter Unsalted, Softened
  • 1 Egg Large
  • 8 oz. Cream cheese Full fat, Softened
  • 1 teaspoon Vanilla extract
  • 1 box White cake mix
  • 1-2 cups Powdered sugar for rolling cookie dough balls
  • Christmas Sprinkles

Instructions:

  1. Preheat your over to 350º F and line a cookie tray with parchment paper. Set aside.
  2. In a large mixing bowl, add butter, egg, cream cheese, vanilla extract and mix until smooth. 
  3. Add cake mix and mix until combined. 
  4. Mix in your festive sprinkles, if you want. This part is optional.
  5. Cover bowl and chill in the fridge for at least 30 minutes to make the dough easier to handle. 
  6. Scoop out small portions of the dough and make little balls.
  7. Roll these cookie balls in a bowl of powdered sugar until fully coated. 
  8. Place them on a cookie tray, lined with parchment paper.
  9. Bake at 350º F for 10-12 minutes or until edges are firm but the centers are slightly soft (should not be jiggly though!)
  10. Optional: Sift more powdered sugar on top of the cookies, prior to serving. 
  11. Enjoy!

I hope you enjoy, these are now one of my older cousins all time favorite cookies now and has requested them for Christmas. I don’t blame her, they are pretty delicious and I love when they are nice and warm.
