Pumpkin Cream Cheese Bread
I love October because I think it’s the perfect time to bake, and I may not care for pumpkin I LOVE pumpkin with cream cheese so here is a recipe to my very cozy Pumpkin Cream Cheese Bread.
INGREDIENTS:
Cake–
- 1 C pumpkin puree
- 1 L egg
- 3/4 C light brown sugar
- 1/4 C oil
- 1/4 C sour cream
- 1 Tso vanilla extract
- 1/2 Tsp pumpkin pie spice
- 1 C all purpose flour
- 1/2 Tsp baking soda
- 1/4 Tsp salt
Filling-
- 1 L egg
- 4 Ounces cream cheese (softened)
- 1/4 C granulated sugar
- 3 Tsp flour
Instructions:
- Pre-heat oven to 350º and grease a loaf pan with cooking spray
- In a bowl combine pumpkin, eggs, brown sugar, oil, sour cream, and vanilla
- Fold in a pumpkin spice, flour, baking powder, baking soda, salt until combined
- Pour 2/3 of the batter into the prepped pan
- Prepare the cream cheese filling by whisking all the ingredients in a bowl
- Pour the rest of the batter on top, carefully spreading it
- Bake for 40-50 minutes or until a toothpick comes out clean
- Let it cool for 15 minutes.
