Pumpkin Cream Cheese Bread

I love October because I think it’s the perfect time to bake, and I may not care for pumpkin I LOVE pumpkin with cream cheese so here is a recipe to my very cozy Pumpkin Cream Cheese Bread.

INGREDIENTS:

Cake

  • 1 C pumpkin puree
  • 1 L egg
  • 3/4 C light brown sugar
  • 1/4 C oil
  • 1/4 C sour cream
  • 1 Tso vanilla extract
  • 1/2 Tsp pumpkin pie spice
  • 1 C all purpose flour
  • 1/2 Tsp baking soda
  • 1/4 Tsp salt

Filling-

  • 1 L egg
  • 4 Ounces cream cheese (softened)
  • 1/4 C granulated sugar
  • 3 Tsp flour

Instructions:

  1. Pre-heat oven to 350º and grease a loaf pan with cooking spray
  2. In a bowl combine pumpkin, eggs, brown sugar, oil, sour cream, and vanilla
  3. Fold in a pumpkin spice, flour, baking powder, baking soda, salt until combined
  4. Pour 2/3 of the batter into the prepped pan
  5. Prepare the cream cheese filling by whisking all the ingredients in a bowl
  6. Pour the rest of the batter on top, carefully spreading it
  7. Bake for 40-50 minutes or until a toothpick comes out clean
  8. Let it cool for 15 minutes.
  9. Enjoy!
