Pumpkin Spice Coffee Cake
I LOVE Coffee Cake, so for the spooky season, I like to make Pumpkin Spice Coffee Cake because its the season for pumpkin.
Ingredients:
Cake-
- 2 C flour
- 1 Tsp baking powder
- 1 Tsp baking soda
- 1/2 Tsp ground cinnamon
- 1/4 Tsp ground ginger
- 1/4 Tsp ground nutmeg
- 1/2 C light brown sugar
- 1/2 C granulated sugar
- 1 C pumpkin puree
- 1/2 c vegetable oil
- 4 Ounces sour cream
- 2 L eggs (beaten)
Streusel–
- 1/2 C light brown sugar
- 1/4 C flour
- 1 Tsp ground cinnamon
- 3 Tbsp melted butter
Glaze-
- 1/2 C powdered sugar
- 2 Tbs maple syrup
Directions:
- Pre-heat oven to 350º and spray a pan with non stick cooking spray
- In a small bowl mix streusel ingredients with a fork until crumbly
- In a large bowl, stir together flour, baking powder, baking soda, salt, cinnamon. ginger, nutmeg, brown sugar and granulated sugar
- IN a small bowl stir together pumpkin puree, oil, sour cream and eggs
- Make a well in the center of the dry ingredients, then pour wet ingredients and gently mix until combined
- Flour in half of the batter in the greased pan, sprinkle some streusel on top. Pour the rest of the batter in the pan and sprinkle the rest of the streusel on top
- Bake for 35 minutes or until the toothpick comes out clean. Let it cool for 15 minutes
- In a small bowl mix powder sugar and maple syrup until well combined and pourable
- Pour the glaze over the cake and enjoy!
