Pumpkin Twist!
Today we are putting a twist on jalapeno poppers. We are going to mummify them. So lets get started.
Ingredients:
- 6 Jalapenos (halved lengthwise and seeds removed)
- 8 oz cream cheese (softened)
- 1 C shredded cheddar (or whichever cheese you prefer)
- 12 Slices of cooked bacon (or more if you love bacon)
- 1 Clove garlic (minced, and optional)
- 1 Sheet of crescent roll dough (or puff pastry, thawed)
- Candy Eyeballs (or dots of sour cream)
- 1 egg (beaten for egg wash)
- Italian Sausage (optional, this is how my uncle makes them and I absolutely LOVE IT!
Directions:
- Preheat your oven to 375º and line a baking sheet with parchment paper and set aside
- Prep jalapenos – cut in half length wise, remove the seeds/membranes
- Make filling – mix cream cheese, cheddar and garlic until smooth. If you chose to add the Italian sausage I like to cut them in half and give them a quick fry
- Stuff peppers – fill each jalapeno half with the cheese mixture and Italian sausage
- Whisk your egg for your egg wash and set aside
- Wrap like mummies – Cook your bacon but not fully (we need it to still have some flexibility to wrap around the jalapeno). Cut your dough into thin strips. Wrap your bacon first and than your dough. Make sure to leave room towards the top for the eyes.
- Place them on your lined baking sheet and brush with your egg wash
- Bake them for 12-15 minutes or until golden brown
- Once slightly cooled add your eyes or pipe on dots of sour cream and place olive bits
