Blogtober 2026: Day 11

Gluten Free Apple Bread!

It is time for our first recipe of the season and I am so excited. So, let’s get started.

Ingredients:

  • 2 C diced apples (2 small or 1 large)
  • 1/2 C brown sugar
  • 2 tsp cinnamon
  • 2 C bobs red mill 1 to 1 flour
  • 3/4 C sygar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 C milk of your choice
  • 1 Tbsp apple cider vinegar
  • Additional large crystal sugar for sprinkling on top

Directions:

  1. Preheat oven to 350º and coat either three mini loaf pans or one loaf pan with butter or olive oil spray
  2. In a small bow combine the sugar and cinnamon and set aside
  3. In a large bowl combine flour, sugar, baking powder, baking soda, and salt. Mix well.
  4. Next add egg, milk and apple cider vinegar to the dry ingredients and whisk until combined
  5. We are going to go in layers. Add a layer of batter, apples, and sugar mixture and continue until gone. Make sure to add some sugar and apples as the last layer of your loaf
  6. Bake for 35 – 40 minutes for the mini loaves or 50 – 60 for the large loaf.
  7. Let it cool (or be like me and burn your mouth) and enjoy!

I am not a huge fan of baked fruit but it wasn’t horrible, I think it added a lot of moisture to the cake. I also used butter instead of olive oil spray. I just prefer it. These not only made the house smell so delicious BUT it was so delicious as well. I found this recipe on Bobs Red Mill website. It was great. I hope you enjoy as much as I did.
